The Famous Poor Man's Filet

 THESE STEAKS HAVE A LONG HISTORY AT PENNY PROFIT GROCERY STORE.  WHEN THEY WERE FIRST INTRODUCED IN THE EARLY FIFTIES, CUSTOMERS RAVED ABOUT THE UNIQUE AND FABULOUS TASTE OF THESE PORK STEAKS.  THEY WERE COMMONLY REFERRED TO AS POOR MAN’S FILETS B/C THEY ARE PORK RATHER THAN BEEF AND THEREFORE MUCH CHEAPER.  THESE STEAKS BECAME A STAPLE IN THE STORE AND WERE PENNY PROFIT’S TOP SELLER FOR MANY YEARS.  ENJOY!  

 

INGREDIENTS:  1 Whole Pork Filet (8 oz is about the smallest you should use), 1 Pack of Bacon,  Mis’ Rubin’s Black Magic Seasoning,  Mis’ Rubin’s White Magic Seasoning, 1 pack of toothpicks

Poor man filets recipes

COOKING:  Trim all fat off of the whole pork filet and cut the filet into thirds.  Beat each piece with a mallet until it is about a half inch thick.  Cut the flattened pieces of pork into sections, so when you fold the meat once it is about the size of a filet mignon or hamburger patty (approx 4” across).  Wrap the outside of the folded pork with one piece of bacon and secure with a toothpick.  Cover both sides of the meat with a generous amount of Black Magic or White Magic (both are great with this recipe) and let the filets sit for 20 minutes.  Grill the steaks over medium heat until they reach your preferred temperature.
